Nacho Chicken Casserole


This recipe comes from my Aunt Jan. We love it! The recipe is rich, so adding a nice green salad will make it a complete meal.

serves 12 ( 8 points +)

  • 2 lbs. boneless, skinless chicken breasts, cooked and cubed
  • 1 pound Velveeta Light Cheese, cubed ( 2%)
  • 2 cans Campbell's Healthy Request or 98% FF cream of chicken soup, undiluted
  • 1 can ( 10 oz) diced tomatoes with green chilies
  • 1 c. chopped onion
  • 1/2 tsp. garlic salt
  • 1/4 tsp. pepper
  • 1 package ( 8 oz.) Baked Nacho Cheese Doritos, crushed


In a large mixing bowl, combine the first seven ingredients. Mix well. Crush chips; set aside 1 c. for topping. Add remaining chips to chicken mixture. Stir until blended. Spoon into a 13 x 9 pan coated with cooking spray. Sprinkle with reserved chips. Bake, uncovered, at 350 for 30 minutes or until cheese is melted and edges are bubbly.
