Apple Walnut Pancakes



Apple Walnut Pancakes: Makes 18 pancakes ( 2 pancakes = 6 points + )



  • 1 c. all purpose flour
  • 1 c. whole wheat flour
  • 1 T. brown sugar
  • 2 tsp baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 egg whites
  • 1 egg
  • 2 c. skim milk
  • 2 T. canola oil
  • 1 medium apple, peeled and chopped
  • 1/2 c. chopped walnuts 



In a large bowl, combine the first 6 ingredients. In a small bowl, combine the egg whites, egg, milk and oil. Add the wet mixture to the dry and stir until moistened. Fold in apple and walnuts.
Pour by 1/4 cupfuls ontio a hot griddle coated with cooking spray. Turn when bubbles form on top. Cook until second side is golden brown.

  1. I made these for my 19 year old daughter for Sunday breakfast the week before college started up again. They were soooo yummy and our house smelled so delicious, I almost didn't cry.
