Autumn Apple Bread: Serves 16 (4 points +)
Beat oil and sugar until light and fluffy; add eggs and beat well. Sift flour wiht next three ingredients. Add alternately with apples to egg mixture. Stir in vanilla and nuts.
Transfer to a loaf pan coated with cooking spray. Bake at 350 for 50-60 minutes or until a fork inserted near the center comes out clean. Cool before slicing.
- 1/4 c. canola oil
- 2/3 c. sugar
- 2 eggs
- 2 c. flour, sifted
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. vanilla
- 2 c. raw apples, peeled and coarsely grated
- 1/3 c. chopped walnuts
