Cranberry Scones

A "Weight Watcher's" recipe
Cranberry Scones: makes 12 ( 4 points +)

  • 2 c. flour
  • 1 T. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 c. sugar
  • 1 egg
  • 1 c. buttermilk
  • 1/4 c. butter, melted
  • 2/3 c. dried cranberries

Preheat oven to 400. Coat a cookie sheet with nonstick spray.
In a medium bowl combine the first 6 ingredients. Mix the butter with egg and buttermilk. Add to the dry ingredients and stir to combine. Fold in cranberries. Drop 12 equal mounds of batter onto cookie sheets. Bake 12-15 minutes or until tops just start to turn golden.

I think these would freeze well. Also, you can reheat in the microwave if not soft the next day.
