Double Chocolate Pancakes with Sliced Strawberries

from the cookbook "Slim and Scrumptious"


Double Chocolate Pancakes with Sliced Strawberries: serves 6 ( 2 pancakes = 5 points)

  • 1/2 c. white whole wheat flour 
  • 1/2 c. all purpose flour
  • 1/4 c. unsweetened cocoa
  • 1/4 c. sugar
  • 2 T. ground flaxseed
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. Kosher salt
  • 1 egg
  • 1 egg white
  • 1 c. skim milk
  • 1 T. canola oil
  • 1 tsp. vanilla
  •  1/4 c. miniature chocolate chips
Whisk together all ingredients until pancake consistency. Stir in chocolate chips. Coat a griddle with cooking spray and heat. Drop batter by 1/4 cup full onto hot griddle. Cook until small bubbles form around edges. Flip and cook and additional 1-2 minutes. Serve with sliced strawberries and a small amount of sugar free syrup if you like.
