Grown-Up Grilled Cheese



Grown -Up Grilled Cheese: serves 4 ( 5 points)
(Cooking Light)

1 c. vertically sliced red onion
1 garlic clove, minced
1 c. shredded reduced fat white cheddar
8 slices Pepperide Farm Wheat bread ( 70 calories per slice)
2 c. fresh spinach leaves
8 slices fresh tomato
6 slices Oscar Mayer fully cooked bacon, microwaved for 1 minute

Heat a large nonstick skillet coated with cooking spray. Add onion and garlic; cook until tender and golden brown.
Sprinkle 2 T. cheese over each of 4 slices bread. Top each slice with 1/2 c. spinach. 2 tomato slices, 2 T. onion mixture and 1-1/2 bacon slices. Sprinkle each with 2 T. cheese; top with remaining 4 bread slices.
Heat skillet over medium heat. Coat with cooking spray. Cook until golden on each side and cheese is melted.
