Sausage and Spinach Pie

Sausage and Spinach Pie: serves 6 ( 7 points +)



  • 1 Pillsbury refrigerated pie crust
  • 1/2 lb. turkey Italian sausage ( hot), casings removed
  • 1 c. egg beaters
  • 1 package ( 10 oz ) frozen chopped spinach, thawed and squeezed dry
  • 1 c. shredded part skim mozzarella cheese
  • 2/3 c. reduced fat ricotta
  • 1/8 tsp. pepper
  • Marinara sauce ( optional)



Unroll and press pie crust into a deep dish pie plate.
Meanwhile, in a nonstick skillet, cook sausage over medium heat until no longer pink; drain.
In a large bowl, whisk the egg beaters, spinach, cheeses, pepper and sausage. Pour into crust. Place pie on baking sheet. Bake for 40-45 minutes at 400 degrees or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Top each slice with about 2 T. marinara if desired.
