Stuffed Acorn Squash

from "Better Homes and Gardens New Dieters Cookbook"


Stuffed Acorn Squash: serves 2 ( 7 points +)




  • 1 small acorn squash, about 1 pound
  • 6 oz. lean ground turkey
  • 1/4 c. chopped celery
  • 1/4 c. chopped onion
  • 1/4 tsp. salt
  • 1/4 tsp. curry powder
  • dash of cinnamon
  • 1/2 c. unsweetened applesauce
  • 1 slice raisin bread, cubed ( about 3/4 c.)




Spray an 11 x 7 baking dish with cooking spray. Cut squash in half and scoop out seeds. Place, cut side down, in the baking dish and microwave on high for 7-9 minutes or until tender.
Meanwhile, brown ground turkey, onion and celery in a nonstick skillet. Drain. Return to skillet and stir in spices, applesauce and bread cubes. Turn squash over and spoon stuffing mixture into the center. Microwave for 2-3 minutes until heated through.
