Warm Chocolate Melting Cups


My very favorite chocolate recipe! This tastes like a warm, melted brownie!
from Taste of Home's "Healthy Cooking" magazine

serves 10 (6 points +)

1-1/4 c. sugar, divided
1/2 c. baking cocoa
2 T. flour
1/8 tsp. salt
3/4 c. water
3/4 c. + 1 T. semi-sweet chocolate chips
1 T. brewed coffee
1 tsp. vanilla
2 eggs
1 egg white

In a small saucepan, combine 3/4 c. sugar, cocoa, flour and salt. Gradually stir in water. Bring to a boil; cook and stir for two minutes or until thickened. Remove from heat and stir in the chocolate chips, vanilla and coffee until smooth.
In a large bowl, beat the eggs and egg white until slightly thickened. Add the remaining sugar, beating until thick and lemon-colored. Fold into chocolate mixture.
Transfer to 10 ramekins coated with cooking spray. Place ramekins in a large baking pan; add 1" boiling water to the baking pan. Bake at 350, uncovered, for 20-25 minutes or until centers are just set ( do not over cook... this is best served warm and slightly gooey!) Cool slightly and serve.
