Zucchini Pancakes



Zucchini Pancakes: serves 5 (4 pancakes = 3 points +)


  • 2 medium zucchini, grated
  • 1/2 c. finely chopped onion
  • 1/4 c. fresh parsley
  • 1 garlic clove, minced
  • 2 eggs
  • 1/4 c. grated Parmesan cheese
  • 1/2 c. white whole wheat flour
  • salt and pepper to taste


Heat a large nonstick skillet or griddle coated with cooking spray.
In a large bowl, stir together all ingredients until blended. Drop by tablespoonful onto hot pan. Cook until browned and crisp on each side. Spray pan between each batch.
Serve with sour cream or applesauce if desired.
