Black Forest Brownies


These brownies are so chocolate-y good! We made them for our friend, Eric, who loves chocolate!

serves 18 (4 points)

1 box Betty Crocker low-fat fudge brownie mix ( for a 13 x 9 pan size)
1 egg
1 T. canola oil
1/2 c. water
1 c. no sugar added cherry pie filling

Frosting:
3 T. light stick butter
1-1/2 c. powdered sugar
1/2 tsp. vanilla
3 T. baking cocoa
pinch of salt
1/4 c. cold coffee

Whisk together brownie mix, egg, oil and water until well mixed. Stir in cherry pie filling. Transfer to a 13 x 9 pan coated with cooking spray and bake at 350 for 25-30 minutes. Cool completely.
For frosting, beat ingredients until well blended. Spread over cooled brownies.

  5. Okay, these are seriously delicious!!! My frosting didn't harden up, it's very runny.. any idea what I did wrong? I don't care though, it's SO SO YUMMY!!!!!! I'm making several of your recipes this week for my husband & I. If they are all this good, I'm going to be in Weight Watchers heaven!! Thank you for posting this.. I'm definitely going to use this as my birthday cake!!!!

    I am sorry your frosting did not turn out well. It could be anything from weather to elevation where you live. I would say, add the coffee only as needed next time. You may just start with a tablespoon or two. Also make sure your butter is slightly softened, but not melted.
    I am glad you liked the brownies. You will have to let me know what else you try and if you like it.

  7. I zapped the butter in the microwave, and it was partially melted.. I was afraid that could be the reason. That's okay - I popped them in the frig so that the icing would harden some. Seriously though, they are SO delicious. I'm having to refrain from going to get another!!
