Whole Wheat Buttermilk Pancakes


These were so good! You can top with some sliced strawberries or 1/4 c. Log Cabin sugar-free syrup.

Whole Wheat Buttermilk Pancakes: serves 6 ( 2 pancakes = 5 points +)

  • 3/4 c. all-purpose flour
  • 3/4 c. whole wheat flour ( I used white whole wheat from King Arthur)
  • 3 T. sugar
  • 1-1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1-1/2 c. lowfat buttermilk
  • 1 T. canola oil
  • 1/2 c. egg beaters


In a large bowl, combine all ingredients with a wire whisk. Heat a griddle or large nonstick skillet coated with cooking spray. Drop pancake mixture by 1/4 cup onto hot griddle. Cook until bubbles form and edges start too look cooked. Flip and cook until other side is golden. Serve with berries and syrup if desired.=
