Grilled Potato and Onion Slices

Here is a great way to make a bunch of potatoes at once.

serves 4 ( 4 potato slices = 3 points +)

2 medium potatoes, sliced about ⅛" thick
4 tsp. light tub butter
onion, thinly sliced
salt, pepper and parsley flakes to taste

Place sliced potatoes on top of a sheet of foil. Top each potato with onion and ¼ tsp. light tub butter.
Sprinkle with salt, pepper and parsley. Wrap. Place on grill and cook until tender, flipping foil package once. ( about 10 minutes)

  1. Ohhhhhhhhhhhhhhh!!!! What a fabulous idea!!! We used to take long potatoes and slice them almost all the way through and put a big gob of butter and onion between each slice and wrap in foil and bake. I NEVER thought of doing it this way and keeping it WW friendly! I actually said 'ohhhhhhhhhhhhh'! right out loud!

    I've said it before, and I'll say it again. THANK YOU FOR SHARING!!! I will SOOOO make these next time I cook. I truly appreciate the effort you put into your blog.
