Chili Corn Chip Pie




serves 4 ( 8 points +)



  • 1 lb. lean ground beef ( 93% lean)
  • 1 c. chopped onion
  • 2 T. garlic powder
  • ½ tsp. ground cumin
  • ½ tsp. cayenne pepper
  • ⅛ tsp. salt
  • 1 T. tomato paste
  • 1 c. fat-free beef broth
  • 1 ( 10 oz) can diced tomatoes with green chilies
  • 4 oz. Fritos corn chips
  • 8 T. reduced fat shredded cheddar cheese
  • ¼ c. fat-free sour cream
  • ½ c. sliced green onions



In a large nonstick skillet, brown beef with onions. Drain. Return to pot and add next 7 ingredients ( through diced tomatoes). Bring to a boil; reduce heat and simmer for 15 minutes.
Place 1 ounce corn chips in each bowl. Top with about ⅔ c. chili, 2 T. cheese, 1 T. sour cream and 2 T. green onions.

  1. Sounds delicious! Can you please tell me how many calories per serving? Sorry to keep asking about the calories...I count calories and my husband does WW Points Plus. Thanks for all the great recipes.

    The calorie count is 414 with regular cheese. I used reduced fat.
