Banana Breakfast Cake



What a perfect addition to a light breakfast! This recipe was originally from my grandmother, but I have lightened it considerably. It still has a great taste and is very satisfying. You can use regular sugar and you can also substitute ¼ c. butter for ¼ c. of the applesauce if you like, but the points value will increase.


serves 24 ( 2 points +)



  • 2 c. white whole wheat flour
  • 1 c. all-purpose flour
  • 2 tsp. baking soda
  • ¾ c. unsweetened applesauce
  • 2 c. Xylitol ( sugar substitute- brand name Ideal)
  • 3 eggs
  • 3 medium bananas
  • ¾ c. fat-free sour milk ( ¾ c. milk with ¾ tsp. white vinegar-let stand for a few minutes)
Beat applesauce with Xylitol. Add eggs, bananas and sour milk. Mix well.

Sift together flours with baking soda. Add to banana mixture and beat for 2 minutes.

Transfer to a 13 x 9 baking dish coated with nonstick spray. Bake at 350 for 30-45 minutes or until done. Do not overbake.
