Malibu Chicken Bundles

Yes, this is as good as the picture looks. Since it is higher in points, use low point items for the rest of your meal...salad, green beans, fruit or a small potato.

Malibu Chicken Bundles: serves 8 ( 7 points +)



  • 8 boneless, skinless chicken breast halves ( 4 oz each)
  • 1/4 c. honey Dijon mustard
  • 8 thin slices deli ham, such as Hillshire Farm
  • 4 slices reduced fat Swiss, such as Sargento
  • 1 can ( 8 oz) unsweetened crushed pineapple, well drained
  • 1c. Panko Japanese bread crumbs
  • 1/4 tsp. salt
  • 1/4 tsp. pepper



Sauce:

  • 1 can Campbell's Healthy Request Cream of Chicken Soup, undiluted
  • 1/4 c. FF sour cream * Breakstone's is best



Flatten chicken breast to 1/4" thickness. Spread mustard over each; layer with ham, cheese and a small spoon of pineapple. Roll and secure with toothpicks. Brush outside of chicken with mustard. Combine Panko with salt and pepper. Roll mustard coated chicken in Panko. Place seam side down in a baking dish coated with cooking spray.
Bake, uncovered at 350 for 30-45 minutes or until chicken is cooked through.
For sauce, combine soup and sour cream in a small saucepan. Heat and stir until hot. Spoon over chicken.
