Southwest Surprise Bread

I love this bread and its secret ingredient! I believe this recipe came from Taste of Home's "Healthy Cooking"

Southwest Surprise Bread: Makes 2 loaves ( 16 slices each, 1 slice = 2 points)

2 packages ( 1/4 oz each) active dry yeast
2 c. warm 2% milk
1 can ( 16 oz) FF refried beans
2 T. sugar
2 T. butter, melted
2 tsp. salt
5-6 c. all purpose flour

In a large mixing bowl, dissolve yeast in warm milk. Add the beans, sugar, butter, salt and 2 c. flour. Beat until smooth. Stir in enough remaining flour to form a dough. Turn onto a lightly floured surface and knead until smooth and elastic, about 6-8 minuntes. Place in a bowl coated with cooking spray, turning once to coat. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down, Turn onto a lightly floured surfacel divide in half. Shape into loaves and place in two loaf pans coated with cooking spray. Cover and let rise until doubled, about 30 minutes. Bake at 350 for 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.
