Pumpkin Oat Muffins




Pumpkin Oat Muffins: Makes 12 muffins ( 4 points +)



  • 1/2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1-1/2 c. oat bran or rolled oats ( we used rolled oats, quick cooking kind)
  • 2/3 c. firmly packed brown sugar
  • 1 tsp. pumpkin pie spice
  • 1 c. canned pumpkin
  • 2 T. canola oil
  • 1/2 c. skim milk
  • 2 egg whites, lightly beaten



Combine first 6 ingredients in a large bowl. Make a well in the center. Combine pumpkin and next three ingredients. Add to flour mixutre and stir until moistened. Spoon into muffin pans coated with cooking spray. Bake at 425 for 15 minutes or until toothpick inserted near center comes out clean.
