Simple Sesame Chicken

from Taste of Home's "Healthy Cooking"


Simple Sesame Chicken: serves 6 ( 7 points +)



  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1-2/3 c. Caesar salad croutons, crushed
  • 1/4 c. sesame seeds
  • 1/2 c. egg beaters
  • 1-1/2 lbs. boneless, skinless chicken breast, cut into 1" strips
  • 2 tsp. butter
  • 2 tsp. canola oil



In a shallow bowl, combine the flour, salt and pepper. In another bowl, combine the crushed croutons and sesame seeds. Place eggs in a thrid bowl. Coat chicken with flour mixture, then dip in eggs, then coat with crouton mixture.
In a large nonstick skillet coated with cooking spray, cook chicken in batches in butter and oil over medium heat for 4-6 minutes per side or until no longer pink.
