Spring Spinach Salad

Shown without dressing

Another fresh tasting spring salad!


serves 6 ( 3 points +)


Salad:

  • 5 oz. fresh baby spinach
  • 2 kiwi, peeled and sliced
  • 1 c. sliced strawberries
  • ¼ c. chopped pecans, toasted



Dressing:

  • 2 T. raspberry vinegar
  • 2 T. olive oil
  • 1 tsp. honey
  • 1 tsp. Dijon mustard
  • salt and pepper to taste
Combine salad ingredients in a large bowl. Whisk dressing ingredients together. Drizzle over salad and toss to coat.
