serves 6 ( 2/3 c. = 4 points +)
- 1-1/2 c. diced mango
- 1 c. thinly sliced green onions
- 1/2 c. cooked brown rice ( I used Minute Rice to save time)
- 1/4 c. chopped, fresh cilantro
- 2 T. salsa verde
- 2 T. lime juice
- 2 T. olive oil
- salt and pepper to taste
- 1 ( 15 oz) can black beans, drained and rinsed
Combine all ingredients in a bowl. Toss lightly to mix.
