Mango Black Bean Salad


serves 6 ( 2/3 c. = 4 points +)

  • 1-1/2 c. diced mango
  • 1 c. thinly sliced green onions
  • 1/2 c. cooked brown rice ( I used Minute Rice to save time)
  • 1/4 c. chopped, fresh cilantro
  • 2 T. salsa verde
  • 2 T. lime juice
  • 2 T. olive oil
  • salt and pepper to taste
  • 1 ( 15 oz) can black beans, drained and rinsed


Combine all ingredients in a bowl. Toss lightly to mix.
