This recipe was adapted from "Healthy Cooking"
Serves 10 ( 1-½ c. = 5 points +)
- 1 lb. lean ground beef ( 95% lean)
- 2 c. chopped celery
- 1 c. chopped onion
- 2 tsp. minced garlic
- 4 c. hot water
- 2 medium potatoes, cubed
- 2 c. frozen corn
- 1-½ c. uncooked small pasta shells
- 28 oz. can diced tomatoes
- 4 c. tomato juice
- salt and pepper to taste
Brown beef with celery and onion until meat is no longer pink. Drain. Add garlic, water, potatoes, corn and pasta. Bring to a boil. Cover and reduce heat to simmer for 15 minutes or until pasta is done. Add remaining ingredients and heat through.

ReplyDeleteI see the original recipe from Healthy Cooking called for canned tomatoes but you did not use them, but is that a tomato i see in the picture?
I also have a soup similar to this called Spicy Fish Stew.
12 oz Haddock or Cod
1/2 cup chopped onion
1 tsp vegetable oil
1 (14 1/2 oz.) can diced tomatoes with green pepper,
celery and onion.
1( 11oz) can spicy tomato juice
1 cup sliced quartered zucchini
3/4 cup frozen whole kernel corn
Rinse fish and pat dry.Cut into 3/4 inch pieces.
In 3 qt saucepan cook onion in hot oil until tender.Stir in
undrained tomatoes,tomato juice.zucchini and corn.
Bring to a boil.Reduce heat and simmer 5 minutes.
Add fish. Continue cooking 6 more minutes or until fish
flakes with a fork and zucchini is tender.
Serves 4.

You can also substitute cooked shrimp or crab for the fish.Simply add instead of the fish and cook until heated
through.

I made the hamburger soup recipe today and it is so delicious!. I changed it slightly by cutting the celery down to 1/2 C and adding 1 1/2C zucchini and summer squash. I also added some fresh chopped basil and a dash of cayenne pepper. I love your site!!
