Banana Chocolate Chip Cupcakes with Peanut Butter Frosting

I consider anything frosted as being upgraded. This recipe is really a muffin recipe, but since I frosted it, I consider it upgraded to a cupcake!

serves 12 ( 7 points + )

  • 1-⅓ c. all-purpose flour
  • ⅔ c. white whole-wheat flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ⅔ c. sugar
  • 2 medium bananas, mashed
  • ¼ c. canola oil
  • ¼ c. egg beaters
  • ⅓ c. miniature chocolate chips

  • ¼ c. creamy peanut butter
  • 1 c. powdered sugar
  • 2 T. skim milk

Combine first 5 ingredients ( through salt) and set aside.
In a large mixing bowl, beat sugar, bananas, oil and egg beaters. Add dry ingredients and mix until just combined. Stir in chocolate chips.
Spoon evenly into paper lined muffin cups. Bake at 375 for 15 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.

For frosting, beat peanut butter and powdered sugar. Add milk as needed to make spreading consistency. Frost cupcakes.

  1. Um, I don't see any thing that says yogurt in the ingredients, but it says to mix it in the much?

  2. Oops! Sorry about that. Omit the yogurt. It was a misprint. I will fix it now. Thanks for noticing that!

  3. These were delicious! Thank you thank you. What can be better then chocolate and banana together and I can figure it into my points!

  4. Is there a difference in using white whole wheat flour over just regular whole wheat flour?

  5. How many points plus are without frosting?

  6. Hello, thanks for this recipe. I love baking but am doing the WW course too. So this is a great help! Just a question / can you describe ´egg beaters´ for me please. I´m from Holland and Google translator is not clear in this. Is is beaten egg of only the yolks or the whites? Thanks for answering, Annemieke

  7. Egg beaters are egg substitute. You can use beaten egg whites, so for this recipe, it would be 2 beaten egg whites.

I love hearing from people who visit my blog! Let me know that you stopped by and let me know if you try a recipe!
