This light, refreshing salad is perfect for fall and scores high on the "crunch" scale!
serves 8 ( about 1/2 c. = 1 point +)
- 2 T. olive oil
- 2 T. fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 c. thinly sliced apple
- 2 c. sliced celery
- 1/3 c. thinly sliced red onion
- 1/2 c. loosely packed fresh flat-leaf parsley
Combine first 4 ingredients in a bowl. Add apple and remaining ingredients. Toss to coat.
