Vegetable Pork Soup



Serves 4 ( 1-⅓ c. = 6 points + )

1 lb. pork tenderloin, cubed
1 tsp. garlic powder
2 tsp. canola oil
1 can ( 28 oz) diced tomatoes
4 medium carrots, chopped
2 medium potatoes, cubed
1 can ( 12 oz) light or non-alcoholic beer
¼ c. quick cooking tapioca
1 T. Worcestershire sauce
1 T. honey
1 tsp. dried thyme
salt and pepper to taste.

Brown pork in oil. Place pork along with remaining ingredients in a crock pot and cook on low for 7-8 hours or on high for 5-6 hours or until meat and vegetables are tender.
