Italian Roasted Potatoes

serves 8 ( 4 points + )

2 lbs. red potatoes, cubed
2 garlic cloves, crushed
salt and pepper to taste
½ c. red onion , chopped
¼ c. olive oil
¼ c. parmesan cheese

Toss potatoes with garlic, salt, pepper, and olive oil. Place in a baking dish and bake at 375 for 30-40 minutes or until almost tender. Add parmesan cheese and toss to coat. Bake an additional 10 minutes.
