Italian Bread Salad

Being Italian, I love bread!! That means I have to look for ways to lighten some favorite recipes. I hope you like this lightened version as much as I did!



serves 8 ( 1 c. = 3 points + )

  • 5 oz. French bread baguette, cubed into 1 inch pieces
  • olive oil cooking spray
  • 2 garlic cloves, crushed
  • 1 c. chopped red onion
  • 1 green pepper, chopped
  • 1 pint cherry or grape tomatoes, halved lengthwise
  • 2 T. red wine vinegar
  • 3 T. olive oil
  • ½ tsp. salt
  • fresh basil


Place bread cubes on a baking sheet and spray with cooking spray. Toss with garlic and salt.  Bake at 450 for 10-15 minutes or until crisp. Set aside.
Mix onion with vinegar and let stand for 10 minutes. Stir in green pepper, tomatoes and olive oil.
Fifteen minutes before serving, stir in bread cubes and basil.

    The last several recipes ( since WW came out with points plus) are calculated according to points plus. Previous recipes are not. I may go back when I have time and start changing some of them.
    I hope you enjoy the recipes on this blog. My family has!

  4. This brings back so many memories. My Nonna used to make this all the time in the summer when she visited us..she would go out into the garden and pick our tomatoes and peppers and in no time..this salad would be on the table.

    I haven't made it in years..thanks for reminding me and making me smile :)
