Teriyaki Grilled Chicken

This recipe comes from my Aunt Jan. It makes the most juicy chicken and is full of flavor! You do not need to double the marinade if you make more chicken. There is plenty.

serves 6 ( 4 points +)

6 boneless, skinless chicken breasts ( 4 oz. each)
3/4 c. pineapple juice ( I used the juice from a 20 oz. can of pineapples)
3/4 c. fat-free chicken broth
1/2 c. low sodium soy sauce

Place all ingredients in a large ziplock bag. Seal and turn to coat. Refrigerate several hours or overnight.
Spray a grill or grill pan with cooking spray. Cook until chicken is no longer pink.

  5. It was someone else, but I found it anyway. Thanks. And I am back here to let you know my family enjoyed the chicken. I was only able to let it marinade for about an hour and a half...and it was still good, but you are right, I believe would have been even better if able to marinade longer. So easy though, and very moist as you mentioned. A keeper for sure!

  6. Hi, I found your blog via http://www.skinnytaste.com/, and I can't wait to try your recipes! One question--I get that 4oz. boneless skinless chicken breast=4pts., but what about the pineapple juice? ETools says 1cup=1pt. for pineapple juice. Am I missing something? Thanks!

    You are not cooking or consuming the pineapple juice. Not enough permeates the chicken to count it.
