This yummy breakfast can be made in about the time it takes to toast an English muffin!
serves 1 ( 4 points +)
- 1 low fat English muffin, toasted
- 1 T. low-fat ricotta cheese
- 1/4 c. egg beaters
- 1/2 small plum tomato, sliced thinly
- 1/4 c. fresh, baby spinach leaves
- salt and pepper to taste
Season ricotta with salt and pepper. Spread over one half of the English muffin.
Top with spinach and sliced tomatoes.
Coat a nonstick skillet with spray. Cook egg beaters. Place on top of tomato. Top with remaining English muffin half.
i WISH i like eggs but they make me gag; i cannot eat them. nor oatmeal. how pathetic is that?! :) any other, high protein, low calorie suggestions? this is such a struggle for me!!

DeleteSorry to hear that you do not like eggs or oatmeal. You could try a little chicken breast in place of eggs.
Also, Dannon Light and Fit has a new Greek yogurt that is awesome. I love the vanilla and also several varieties with the fruit in the bottom. They are only 2 points each. Quinoa, which is a high protein grain, is also full of protein. There are several recipes on the web using quinoa including everything from a breakfast cereal, to cookies to a dinner dish.
