Apricot Crusted Roast Pork



Apricot Crusted Roast Pork: Serves 8 ( 4 oz. = 5 points)

2-1/4 lb. boneless pork loin roast
sugar free apricot jam
reduced at wheat thins or 2 packets of WW thin crisp crackers

Crush crackers and place in a shallow dish or on wax paper. Brush roast with apricot jam. Roll in crushed crackers. Bake at 350 for 2 to 2-1/2 hours or until meat thermometer registers 160 degrees. Let stand 10 minutes. Slice thin.
