Broccoli Fritters





from Taste of Home's "Healthy Cooking"


Broccoli Fritters: serves 6 ( 2 fritters = 3 points +)

  • 1 bunch of broccoli, steamed and cut small
  • 2 eggs lightly beaten
  • 2 egg whites, lightly beaten
  • 1/3 c. grated Parmesan cheese
  • 2 T. flour
  • 1/2 tsp. each of salt, garlic powder and pepper
  • 2 T. canola oil
  • Salsa ( optional)
In a large bowl, combine, eggs, whites, cheese, flour and spices. Stir in coarsely chopped broccoli (already steamed)
Spray a nonstick pan or griddle with cooking spray. Add 1 T. oil. Drop six fritters by tablespoonfuls onto pan. Cook 3-4 minutes per side or until golden brown. Repeat with remaining oil and fritters. Serve with salsa if desired.
