Potato Apple Latkes



Potato Apple Latkes: serves 8 ( 2 latkes = 3 points)
6 c. shredded frozen hashbrowns, thawed
2 c. grated apple
1-1/2 tsp. salt. divided
1/2 tsp. pepper
1/2 c. flour
1 tsp. sugar
Place potatoes and apples and 1 tsp. salt in a colander. Let stand 20 minutes, pressing liquid out occasionally. Combine potato mixture with remaining salt and flour.
Heat a nonstick griddle sprayed with cooking spray. Drop latkes on hot pan. Cook until browned on each side. Sprinkle with sugar.
