Oatmeal Chocolate Cherry Cookies: makes 30 ( 2 points each)
a Cooking Light recipe.
1/3 c. all purpose flour
1/3 c. whole wheat flour
1-1/2 c. rolled oats ( I used quick rolled, but you can also use old fashioned rolled)
1 tsp. baking soda
1/2 tsp. salt
6 T. butter, softened
3/4 c. packed brown sugar
1 c. dried cherries
1 tsp. vanilla
1 large egg, lightly beaten
3 oz. bittersweet chocolate, coarsely chopped
Preheat oven to 350 and spray 2 cookie sheets with nonstick spray.
Combine flours with next three ingredients ( through salt) in a large mixing bowl.
Melt butter in a small saucepan. Remove from heat. Stir in brown sugar untils mooth.
Add sugar mixture to flour mixture; beat with a mixter at medium speed until well blended. Add cherries, vanilla and egg; beat until combined. Fold in chocolate.
Drop dough by tablespoonful onto prepared baking sheets. Bake for 10-12 minutes or until lightly browned. Let cool for 3 minutes on cookie sheets. Remove from pans to wire racks to cool completely.
