Sausage and Spinach Pie: serves 6 ( 7 points +)
Unroll and press pie crust into a deep dish pie plate.
Meanwhile, in a nonstick skillet, cook sausage over medium heat until no longer pink; drain.
In a large bowl, whisk the egg beaters, spinach, cheeses, pepper and sausage. Pour into crust. Place pie on baking sheet. Bake for 40-45 minutes at 400 degrees or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. Top each slice with about 2 T. marinara if desired.
- 1 Pillsbury refrigerated pie crust
- 1/2 lb. turkey Italian sausage ( hot), casings removed
- 1 c. egg beaters
- 1 package ( 10 oz ) frozen chopped spinach, thawed and squeezed dry
- 1 c. shredded part skim mozzarella cheese
- 2/3 c. reduced fat ricotta
- 1/8 tsp. pepper
- Marinara sauce ( optional)
