Chili Roasted Potatoes


This side dish goes with almost anything! I have lightened this recipe, which comes from a dear friend and family member, Heather.

serves 8 (5 points +)

3 lbs. Yukon Gold Potatos, cut into 1" pieces
1/4 c.. olive oil
2 tsp. chili powder
Kosher salt and pepper to taste
1 tsp. dried thyme.

Toss all ingredients together and transfer to a large baking dish coated with cooking spray. Bake at 400 for 30-40 minutes, stirring once half-way through.

  1. I LOVE this recipe, but I make it a little different. We are onion and garlic fans here, So I use olive oil with garlic salt, pepper, and minced garlic. I also put sliced onions in with the potatoes. So yummy! I cook them til they are a little browned and crispy. :)
