Linzer Tarts: Makes 20 ( 5 points +) Very fun for Valentine's Day!
Cream butter and sugar together. Add vanilla and eggs. Mix flour with salt and gradually add to butter mixture until just blended. Form into a flat disc. Wrap in plastic and refrigerate for at least 30 minutes. Roll dough onto a lightly floured surface 1/8" thick. Cut out with cookie cutter. Cut half of the shapes in the center with a smaller cookie cutter so as to form a "window". Bake at 400 degrees for 8-10 minutes or until lightly browned. Cool completely. Warm the jelly in a saucepan. Spread a small amount over bottom cookies. Top with window cut out cookie. You may need to add extra jelly to the window. Sprinkle with sifted powdered sugar.

- 1/2 tsp. salt
- seedless, no sugar added raspberry jelly ( about ½ c.)
