Rice and Barley Pilaf: serves 6 ( 1/2 c. = 2 points)
3 c. Fat-Free chicken broth
1/4 c. uncooked wild rice
1/4 c. pearl barley
1/4 c. brown rice
1 small onion, finely chopped
1 celery rib, finely chopped
3 garlic cloves, minced
1/4 c. grated Parmesan cheese
1/4 c. Fat-Free half and half
1/8 tsp. pepper
In a large saucepan, combine the broth and wild rice. Bring to a boil. Cover and reduce heat to simmer for 10 minutes. Add the barley and brown rice. Cover and simmer on low for 40 minutes or until tender and liquid is evaporated.
Meanwhile, in a large nonstick skillet coated with cooking spray, saute the onion, celery and garlic until tender. Stir this into the rice mixture. Stir in the Parmesan cheese, half and half and pepper.
