Speedy Ham and Pea Soup

Speedy Ham and Pea Soup: Serves 4 ( 1 c = 4 points +)

  • 2 tsp. olive oil
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1/4 tsp. dried thyme
  • 1 ( 10 oz) package frozen peas
  • 3 c. FF Chicken Broth
  • 1c. chopped ham
  • salt and pepper to taste
  • 3/4 c. seasoned FF crutons

Heal oil in a large saucepan over medium heat. Add onion, celery and thyme. Cook until vegetables are soft. Add peas and cook until bright green. Add broth. Cover and bring to a boil. Uncover and simmer until peas are tender. Cool for 5 minutes. Puree in a blender. Return to pot. Add the ham, salt and pepper. Heat through and serve topped with crutons.
