Cranberry Glazed Pork Roast: Serves 16 ( 4 points) ( 6 points + )
In a small saucepan, combine the cranberry sauce, apple juice, barbeque sauce and salt. Bring to a boil. Reduce heat and simmer for 5 minutes. Mix cornstarch with water. Stir into cranberry mixture. Cook and stir until thickened. Set aside 1 c. sauce.
Place roast in a shallow roasting pan. Bake, uncovered, at 350 for 1-3/4 hours. Brush with leftover sauce. Bake an additional 30 minutes or until meat thermometer reads 160 degrees, basting twice more.
Let stand for 10 minutes before slicing. Serve with reserved sauce. Serving size is 3 oz. meat with 1 T. reserved sauce.
- 4 lbs. boneless pork loin roast
- 1 c. whole berry cranberry sauce
- 3/4 c. unsweetened apple juice
- 3/4 c. BBQ sauce
- 1 tsp. salt
