Sweet Grape Tomato and White Bean Pasta

Sweet Grape Tomato and White Bean Pasta: serves 4 ( 5 points)

1-3/4 c. uncooked whole wheat or multigrain pasta
1 T. olive oil
2 c. grape tomatoes, halved
2 garlic cloves, minced
1 c. chopped bottled roasted red peppers
1 ( 15 oz can ) white beans...either navy or great northern, rinsed and drained
3 c. fresh baby spinach
1 T. dried basil
2 tsp. balsamic vinegar
1/2 tsp. salt
1/4 c. grated Parmesan cheese

Cook pasta. Drain.
While pasta cooks, heat oil in a large nonstick skillet. Add tomatoes; cook 3 minutes. Add garlic; cook 1 minute, stirring constantly. ADd red peppers, beans and spinach; cook 3 minutes. Stir in basil, vinegar, salt and pasta. Heat through. Place in a pasta bowl and sprinkle with Parmesan cheese.
