Blueberry Gems: Makes 36 mini muffins ( 2 muffins = 2 points +)
In a medium bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk together egg whites, orange juice, oil and vanilla. Stir the wet ingredients into the dry until moistened. Fold in blueberries. Spray mini muffin pans with cooking spray. Fill each muffin cup 1/2 full. Bake at 400 degrees for 12- 15 minutes.
- 1-1/2 c. flour

- 2 T. canola oil
- 1 tsp. vanilla
- 1 c. fresh or frozen blueberries
