Vegetable Barley

This is an awesome recipe from Taste of Home's "Healthy Cooking"

Vegetable Barley: serves 4 ( 3/4 c = 2 points)
2-2/3 c. water
1/2 c. barley
1/2 tsp. salt
1 c. fresh snow peas
1 small sweet red pepper, chopped
1 T. canola oil
4 green onions, thinly sliced
2 T. lemon juice
1 tsp. grated lemon peel
salt to taste
In a large saucepan, bring the water to a boil. Stir in barley and salt. Reduce heat to low, cover and simmer 40-50 minutes or until tender and water is absorbed.In a nonstick skillet, saute the peas, onion and pepper in oil for 4-5 minutes. Stir vegetables into the barley mixture with lemon juice, lemon peel and salt to taste.
