Quick and Easy "Fried" Potatoes


serves 4 ( 1 point)

4 c. frozen shredded hashbrowns, thawed and rinsed
1 c. diced onion
1 small green pepper, diced
butter flavored cooking spray
salt and pepper to taste

Spray a large nonstick skillet with butter flavored spray. Add potatoes, onions, peppers, salt and pepper. Cook until browned and tender. I cover mine during cooking.
