Smothered Pepper Steak: serves 4 ( 6 points +)
Place flour in a shallow dish. Dredge patties in flour. Sprinkle patties with salt and pepper. Cook patties in a large nonstick skillet coated with cooking spray for 3 minutes per side. Add stir fry, tomatoes and soy sauce; bring to a boil. Reduce heat and simmer 15 minutes.
- 3 T. flour
- 4 ( 4 oz) ground sirloin patties
- salt and pepper
- 1 ( 16 oz) package frozen bell pepper stir fry
- 1 ( 14.5 oz) can diced tomatoes with balsamic vinegar, basil and olive oil ( such as Hunt's) undrained
- 1 T. low sodium soy sauce
