Tortellini Pasta Salad

This is one of Anthony's favorite pasta salads.

Tortellini Pasta Salad: serves 6 (about 1 scant c. = 9 points +)

  • 1 lb. cheese tortellini, cooked and drained
  • 4 oz. part skim mozzarella cheese, cubed
  • 1 small can sliced black olives, drained
  • 1/2 c. sun-dried tomatoes, julienned ( not packed in oil)
  • 1/4 c. Ken's light balsamic dressing

Combine all ingredients in a bowl. Toss to coat. Cover and refrigerate until serving ( at least one hour)
